原料:凤爪、小米椒
调料:湖南腊八豆、豆瓣酱、豆豉、香葱、盐、糖、绍酒
做法:
1、凤爪剪去指甲剁成两半,香葱切末,小米椒切圈
2、凤爪放入凉水锅中慢慢加热,焯水,吐净血沫,开锅后点少许绍酒去异味
3、凤爪捞出用老抽拌匀腌渍,
4、放入五成油温的油锅中炸制上色捞出待用
5、锅留底油煸香葱花、小米椒放入腊八豆、豆豉、豆瓣酱加少许盐、糖翻调味,炒均匀
6、将凤爪和炒好的腊八豆在碗中拌匀放入蒸锅大火蒸30分钟即可,取出摆盘撒香葱末小米椒圈装饰。
